Making cailles en sarcophages from “Babette’s Feast”

I alter this recipe to exclude the foie gras (because get real), use truffle oil or the like instead of actual truffles, and (unless they’re in season) sub dried figs for fresh. But either way, making these is an exercise in decadence and utter delight.
